Pumpkin Waffles
  1. Lightly grease and preheat a regular or Belgian waffle maker according to manufacturer's directions.
  2. In large mixing bowl, place 2 cups That's Smart! complete pancake and waffle mix, 1 can (15 oz) pumpkin, 1 cup water, 1 tablespoon That's Smart! vegetable oil, and 2 tablespoons pumpkin pie spice. Whisk until smooth.
  3. Add batter to preheated waffle maker. Close lid quickly and bake according to manufacturer's directions until waffle is golden brown. When done, use form to lift waffle off grid. Keep warm on wire cooling rack in 200F oven up to 10 minutes. Repeat with remaining batter.
  4. In large skillet, melt 2 tablespoons unsalted butter over medium heat. Add 2 cored and sliced apples. Cook until tender, about 5 minutes. If desired, serve waffles topped with sauteed apples, maple syrup, whipped cream, and additional pumpkin pie spice.
