Peanut Noodle-Vegetable Bowl


  1. Bring large pot of salted water to boil. Add 1/2 package That's Smart! spaghetti and cook 10 minutes, stirring occasionally.
  2. While spaghetti cooks, whisk 1/4 cup That's Smart! peanut butter, 2 tablespoons That's Smart! honey, 2 tablespoons soy sauce, 1 tablespoon sriracha sauce, 1 tablespoon lime juice, and 1/2 teaspoon ground ginger in large mixing bowl. Pour 1 bag That's Smart! frozen mixed vegetables into bowl.
  3. Transfer cooked spaghetti to bowl with tongs and toss to coat with dressing. If needed, drizzle 1 or 2 tablespoons of pasta cooking water to thin out. Divide noodles and vegetables between 4 serving bowls.
  4. Top each bowl with 1/4 cup thinly sliced cucumber, 1/4 cup thinly sliced red bell pepper, 1 tablespoon chopped cilantro, and 1 tablespoon That's Smart! cashew pieces.
